Activity: Deviled Eggs

This is a delicious treat that you may be familiar with, and now you can make it on your own. Your parents will probably like it as well. This recipe allows for a lot of experimentation in taste, so play around with the ingredients and see what you like best.
Ingredients
Here is what you will need for the recipe:
- Eggs—at least one or two per person
- Mayonnaise
- Mustard
- Salt
- Pepper
- Lemon Juice or Vinegar
You can also add any of these extra flavors if you wish:
- Pickle Relish
- Paprika
- Chili Powder
- Fresh Herbs
- Olive
- Anything else you think would taste good
Directions
First you need to hard-boil your eggs. You will need the stove to do this, so have an adult around to help you. There are many opinions on how to best hard-boil an egg. I will tell you the way that I prefer: I like this method best because you don’t have to drop eggs into boiling water or have a timer. Put all of your eggs in a pan. Then put enough water in the pan to cover the eggs. Next put the pan on the stove and bring the water to a boil. Once the water is boiling, turn off the stove and cover the pan. Let the eggs sit in the water for at least a half hour.
After you take the eggs out of the water, let them cool a bit and then peel the eggs. Sometimes it can be a little tricky to peel the eggs, one way to make it easier is to peel the eggs under running water. The water can get between the shell and the egg, making it easier to remove. The water also washes away any small bits of eggshell.
The next step is to cut the eggs in half the long way and pop out the yolks into a bowl. You want to save the yolks because they will go into our filling.
Set aside the egg whites and get your bowl of egg yolks and a fork. Now add the mayonnaise and mustard a spoonful at a time, and use your fork to mix the yolks and mayo together until the mixture is a bit creamy. Now add a touch of lemon juice or vinegar to give the filling a little zip, and add as much salt and pepper as you like—taste it to see when you’ve gotten enough. Tasting as you go helps you decide if you need more of anything—this is how a chef works on recipes. Just remember to add a little at a time because you can always add more, but it’s really hard to take anything away. If you want to add any of the optional ingredients, do so at this time and make sure it is mixed really well.
When your filling is just the way you want it, scoop it into your empty egg whites and place the filled eggs on a plate. You now have deviled eggs. If you want to put a little garnish of fresh herbs, a sprinkle of paprika, or something else on top to make the eggs look pretty, feel free. Just keep it small so it doesn’t ruin the flavor of the eggs.
